Welcome to the dog days of summer, everybody! The sunny (and HOT) weather is at a peak right now -- looking for ideas for some delicious, easy to make snacks that you can enjoy either outdoors or within the comfort of your air conditioning? Creative & Captivating Cranberry Muffins, by Sam!


Cranberry Muffins with Almond Streusel


Wet Ingredients:

  • 3/4 cup sugar

  • 2 eggs

  • 1/2 cup vegetable oil

  • 1/2 cup milk (skim milk, almond milk, etc.)

  • 1/4 cup orange juice, no pulp (4 medium oranges; using all the juice will double the orange for more flavor, or half fresh squeezed, half bottled, no pulp)

  • zest of 1 large orange (zest up to four medium oranges to intensify orange flavor)

Dry Ingredients:

  • 1/2 cup of craisins (infused with cherry or other flavors work equally well)

  • 1 tbsp of ground ginger

  • 1 tsp ground cardamom

  • 1 tsp cinnamon

  • 2 cups all purpose flour

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

Streusel

  • 1/4 cup baked brown sugar (light or dark)

  • 1/2 cup chopped almonds

  • 2 tbsp all purpose flour

  • 1 tsp each ground cinnamon, ginger, cardamom

  • 1 1/2 tbsp unsalted butter, melted

To make the streusel:

  1. chop almonds fairly finely

  2. melt butter

  3. combine all ingredients in a bowl and mix until fully combined and all sugar has been wet by the butter

  4. Set aside

Remainder of Process:

  1. Preheat oven to 350 degrees

  2. Either spray, butter and flour or put paper muffin holders into a cupcake pan (or use silicone muffin cups and set them unsprayed onto a baking sheet)

  3. Whisk together all the wet ingredients, until well combined

  4. In a separate bowl, whisk together all dry ingredients except the craisins; then, add mixture to the wet ingredients and fold everything together

  5. Take craisins in a small bowl and dust with flour, enough to coat each one, and then fold them into your batter

  6. Put 1 scoop of your batter in each muffin cup

  7. Then sprinkle the streusel on the top of each muffin

  8. Bake 20- 22 minutes until the muffins have risen and begun to turn golden brown around the edges (a toothpick inserted into the center of the muffin should come out clean)

  9. Put on rack to cool; store in an airtight container
