Delectable Dessert Pizzas, by Sam!

Here's my recipe for regular snickerdoodles, which is my go-to for dessert pizza:

  • 1 1/2 cups sugar

  • 1 cup butter

  • 2 eggs

  • 2 3/4 cups flour

  • 2 tsp cream of tartar

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 tsp cinnamon

  • 3 tsp additional sugar

  • 3 tsp additional cinnamon

  • 1 to 1 1/2 tsp vanilla

  • Preheat oven to 375 degrees

  • Sift and combine dry ingredients, except for the additional sugar and cinnamon

  • In a separate bowl, mix the 3 additional teaspoons of sugar and cinnamon

  • In a mixing bowl, cream butter and sugar

  • Add eggs

  • Mix in the dry ingredients, except for the additional teaspoons of sugar and cinnamon

  • Using a cookie scoop or a tablespoon, scoop out balls of dough

  • Roll your dough ball in cinnamon

  • Place on greased cookie sheet and flatten out

  • Bake for about 10 minutes

Adjustments for pizza: make one large ball of dough and roll out into pizzas; sprinkle additional cinnamon sugar mix on top of cookie pizza before baking Here's my recipe for cream cheese frosting, always a favorite! I use the 1/3 less fat cream cheese; full fat works great, of course, but fat free doesn't do the trick for frosting:

Cream Cheese Frosting

  • 8 oz cream cheese, room temperature

  • 8 tbsp unsalted butter, room temperature & cut into pieces

  • 1 cup powdered sugar, sifted

  • 1 tsp vanilla

  • Mix cream cheese in a medium bowl with rubber spatula

  • Gradually add butter and continue mixing until smooth and well blended

  • Sift confectioners sugar in and continue to mix until smooth

  • Add vanilla, stir until mixed in
